Eating well without abandoning your kitchen
Most nutrition advice quietly assumes a Western pantry. Here is how to build a genuinely balanced plate from what a Pakistani household already cooks.

The fastest way to make a nutrition plan fail is to hand someone a food list their family does not cook. Quinoa bowls and overnight oats are perfectly fine foods. They are also the first thing abandoned when a household cooks one salan for everyone.
Start with the plate, not the recipe
Half the plate vegetables — in whatever form your kitchen already produces them, including a well-made bhujia. A quarter protein: daal, chana, chicken, fish, eggs, yoghurt. A quarter starch: rice or roti, portioned rather than eliminated.
Three adjustments that carry most of the weight
- Reduce cooking oil by a quarter. Measure it once with a spoon so you know what you are actually using.
- Put the salad on the table before the salan, not beside it. Order changes portion more than willpower does.
- Serve roti and rice from the kitchen rather than the table. Distance is a portion control tool.
On dessert and chai
Neither needs eliminating. Sugar in chai is worth reducing gradually — a quarter teaspoon less each week is imperceptible and lands somewhere reasonable within two months. Dessert becomes an occasion food rather than a daily one, which is closer to how it was treated a generation ago anyway.
None of this is dramatic. That is the point. Dramatic changes have excellent adherence for eleven days.
